Just select the fill in style editor, open the Fill flyout, and click Browse in the Texture area. Choose any texture map from your computer or network, and your texture fill style will be updated with the new map.

Dual instances of the roughen FX can be applied to get "sloppier" layered watercolor effects. Create a watercolor style with a roughen effect applied to the edge. Then duplicate the style and adjust the roughen to contrast the boundary of the original style. Adjusting the watercolor properties (darkness, edge propogation,width) can also enhance the effect.
